Beet Power Bowl

I've been on a bowl kick recently.  Power salad bowls, since no one can decide what to call them.   This was lifted from a restaurant called Chicken & Pickle in St. Charles MO.

1 cup steamed beets

1/2 cup quinoa

One cup chopped greens/lettuce

2 Tbsp dried cranberries

2 Tbsp Slivered almonds

2 Tbsp Feta

2 Tbsp Lemon Vinaigrette (I use the Paul Newman Brand)


Basically mix and eat.  The beets can be cold from the fridge or warm from the steamer.  Steam the beets before you peel them and wear gloves the whole time to keep your fingers from being red for days!!!  Dietitian says it's better as a side dish for some protein.
